So, we still don't have our kids. We are trying to make the best of it though. On Thursday our friend from Louisiana was in town and asked if he could stay with us. He is on his way to Moab for a wedding. His sister and nephew drove from Moab to pick him up and stayed the night at our house as well. We were really excited to have something to do that would keep our minds off of our baby's. Robby, Shane, Tyler and I went bowling then when KD and Gavin got in town we went to dinner and then visited until we went to bed. Friday morning Tyler had to work so I took advantage and had a nice long bubble bath and read my book. It was wonderful! Afterwards I got ready for the day and Shane and I went grocery shopping. When we were all done Tyler was home. I can't even begin to tell you how bored we were. We couldn't think of anything to do.....I was dying. I told Tyler we needed to just get out of the house so we went to blockbuster and couldn't find anything we wanted to rent so we went back home....awesome! The most exciting part of our evening was getting Shane to and from work. Tyler had to work again on Saturday morning so I got up and cleaned the house and then got ready for the day and took Shane to work. When Ty got home around 12:30 we planned our days events. We were going to go out to dinner and then go to a movie but neither of us were thrilled about doing it. We watch Hell's kitchen all the time and wish we could eat Gordon Ramsey's food so we decided to look up some recipes that we see on the show and give them a try for ourselves. We were really excited to do this because with our kids we eat a lot of pizza, corn dogs and chicken nuggets. To eat real adult food and try cooking it ourselves without whining children was beyond exciting for us. We decided on Beef Wellington with a side of steamed spinach and a fruit tart for desert. So we headed for the grocery store for some items that we needed and went back home and started cooking. It was a very long process, but oh so worth it.
It takes a long time to make beef wellington. There are a lot steps to it. I wish I would have taken pictures as we went along. But this is Tyler putting an egg wash on the puff pastry that surrounds the meat.
And here it is all cooked and ready to eat.
The next thing we need to work on is presentation. Or just not put steamed spinach on the plate. It looks so gross. But it was oh so good!!!
I made the fruit tart from scratch. Even the crust! Again I wish I had step by step pictures but it turned out lovely.

And then we arranged the fruit into this beautiful art. Kiwi, Mango's, and strawberries. The perfect trio.
Oh my goodness, it was heaven. We ate the whole thing. The.Whole.Thing. We ate half of it the first night and the rest of it on Sunday. It didn't last long at all. No worries though. I am going to make it again when Shay gets home because I know she will love it....so will I, and Tyler too. My mouth is watering just thinking about it.
We decided to go all out and have a candle light dinner. Tyler with his wine and I with my Tea....delightful.
Sunday we wanted to go for a hike. We went to Bell Canyon to hike to the waterfall there. We have never been so we had no idea what we were in for. And it was absolutely BEAUTIFUL!
This little lake was so pretty. You can fish there. Who knew? It's amazing the things you learn about your state when you get out. I was so thankful when we reached this point. The ground levels out as you walk around the lake and it gives you some time to catch your breath. I'm already sucking air and this is just the beginning. Once you round the lake that is when it really starts going straight up....I'm in big trouble. Are you wondering if I make it? Me too.

And here I am....success. It really wasn't too bad. Hard, but doable.

He told me if we lived closer he would run the trail everyday. RUN IT. I wanted to punch him. There was hardly anybody on this trail, when we got to the waterfall there wasn't anybody to take our picture for us.....good thing we have a timer!

On the way back down the trail, I got a bit of a foot injury. The trail was kind of steep and from the humid weather we were having, the moisture from the river or possibly from some spray from the waterfall the rocks were slippery. I stepped on a rock and my foot slid off the side of it, twisted my ankle and the side of my foot landed on another rock that had to be the sharpest most jagged rock I could have landed on. I managed to shake it off and walk the rest of the way down the trail. Yep, I'm one tough cookie. Actually I knew if Tyler knew how bad it hurt he would give me a hug and feel all bad for me and I would start crying so I acted like it was no big deal. It actually wasn't that bad but it did HURT! And I do have a little bruise so that made me feel better.

I tried to climb it but I couldn't make it. I blame the foot. Or maybe the fact that my leg muscles were so fatigued they wouldn't stop shaking. Actually I think I could blame that for the foot injury. Shaky legs make for very unstable footing. I should have taken a video of my legs shaking. It was pretty funny. It makes me feel very out of shape when Tyler say's, I was hoping for something a little harder. I should have smacked him, but I just rolled my eyes.
Sunday night we had the most beautiful sunset. I just had to get pictures.
Our kids come home tomorrow. We are beyond excited!!! We just have to make it one more night.....wish us luck!
